PIMENTÃO RECHEADO COM CAMARÃO

Ingredientes (4 pessoas)                                                                                                        

   4        pimentões vermelhos grelhados, sem casca                                                                      
             agrião ou alface picada fino                                                                                             
             azeite de oliva                                                                                                                  
             suco de limão                                                                                                                  

Recheio:                                                                                                                                     
   125     gr de camarão cozido e descascado ou                                                                            
             atum em conserva                                                                                                            
   1        cebola pequena picada                                                                                                    
   1        pimenta vermelha picada                                                                                                  
   3a4     colheres (sopa) de azeite de oliva                                                                                     
             suco coado de limão                                                                                                        
   1        colher (chá) de gengibre fresco ralado                                                                              
             sal                                                                                                                                   
                                                                                                                                                   
Passe o camarão (ou o atum) pelo processador com a cebola e a pimenta. Junte o azeite, aos poucos, até obter uma pasta espessa. Tempere com o gengibre, o suco de limão e o sal. Corte os pimentões em tiras largas, recheie e enrole. Reserve na geladiera. Na hora de servir, arrume o pimentão sobre o agrião (ou alface) e regue com azeite e suco de limão.
