TARTARE DE VIEIRAS

Ingredientes (4 pessoas)                                                                                                        

   200     gr de salmão marinado                                                                                                     
   350     gr de vieiras                                                                                                                     
   2        tomates pequenos maduros, sem pele e sementes, cortados em cubinhos                         
   1        cebolinha verde em anéis bem finos                                                                                 
             sal, pimenta do reino e dill                                                                                                
                                                                                                                                                   
   150     ml de creme de leite                                                                                                         
             suco de limão                                                                                                                  
                                                                                                                                                   
             folhas verdes para salada                                                                                                 
             molho vinagrete                                                                                                               
                                                                                                                                                   
Pique as vieiras bem fino, misture os tomates e a cebolinha e tempere com sal, pimenta dill e suco de limão. Corte o salmão em fatias bem finas recheie com otartare de salmão e enrole com o auxílio de um filme de PVC, para formar um rocambole. Leve à geleadeira para descansar e mesclar os sabores. Bata o creme de leite com o suco de limão e sal até ficar espesso. Arrume as folhas verdes em pratos individuais e tempere com molho vinagrete. Corte o rocambole de salmão em fatias finas e diponha sobre a salada. Intercale o salmão com bolinhas de creme de leite batido. Decore com salsinha.
