MUSSAKÁ

Ingredientes (6 pessoas)                                                                                                        

   ½       kg de batatas em cubos fritas em azeite                                                                          
   4        beringelas grandes                                                                                                          
   2        cebolas picadas                                                                                                             
   ½       kg de carne moída                                                                                                          
   100     ml de azeite de oliva                                                                                                       
   150     ml de caldo de carne                                                                                                       
   2        colheres (sopa) de extrato de tomate                                                                               
             tomilho, alecrim e sálvia                                                                                                  
             sal, pimenta do reino e páprica picante                                                                            

COBERTURA:                                                                                                                         
   200     ml de iogurte                                                                                                                  
   2        ovos                                                                                                                              
   1        pitada de fermento em pó                                                                                               
   2        colheres (sopa) de farinha                                                                                               
             sal                                                                                                                                  

Corte as beringelas ao meio no sentido longitudinal, tempere com sal e pincele com azeite. Asse até amolecerem. Retire a polpa da casca e pique bem miudo. Puxe a cebola no azeite acrescente a carne e refogue bem. Adicione a beringela e cozinhe para mesclar os sabores. Junte o extrato de tomate diluído no caldo de carne e conserve em fogo forte até secar. Incorpore os temperos. Coloque metade da carne numa forma refratária, cubra com as batatas e arrume  a carne restante.
Misture todos os ingredientes da cobertura e espalhe sobre a mussaká. Asse em forno médio.
