LEITOA PURURUCA

Ingredientes (6 pessoas)                                                                                                        

   1        leitoa com aprox. 3kg                                                                                                       
   2        lts de água                                                                                                                       
   150     ml de cachaça                                                                                                                  
   3/4     xicara de suco de limão                                                                                                    
   150     ml de alcool de cereais                                                                                                     

Vinha d’Alhos:                                                                                                                            
   400     ml de vinagre de vinho tinto                                                                                              
   6        dentes de alho, cortados ao meio                                                                                     
   3        cebolas grandes em rodelas                                                                                             
   1        maço de cheiro verde                                                                                                       
   2        pimentões picados                                                                                                           
   70      mlo de suco de limão                                                                                                       
   2        folhas de louro                                                                                                                 
             pimenta em grão                                                                                                              
             noz moscada                                                                                                                   

Preparo:                                                                                                                                      
             sal                                                                                                                                   
   2        dentes de alho amassados                                                                                               
   750     ml de oleo vegetal para a pururuca                                                                                    
   Lave bem a leitoa.
  
Misture a água, a cachaça e o suco de limão e passe por dentro da leitoa. Acrescente o alcool e passe por fora. Prepare a vinha d’alhos e deixe a leitoa nesse molho por 24 horas. Tire a leitoa do tempero. Coe a vinha d’alhos e reserve. Misture o sal e o alho e tempere por dentro e por fora. Asse a leitoa em forno brando, com as patas para baixo, regando de vez em quando com a vinha d’alhos. Quando começar a corar, proteja as extremidades com papel de alumínio.

Pururuca:                                                                                                                                    
Ferva o óleo numa panela e pincele a leitoa, dentro do forno, quando começar a corar. Retire a leitoa do forno quando estiver corada. Corte-a em pedaços e mergulhe cada um deles numa panela com o óleo fervendo, com a pele virada para baixo.
