ESPUMA DE BRÓCOLOS AO CREME DE QUEIJO

Ingredientes (8 pessoas)                                                                                                        
Fazer de véspera                                                                                                                    

   1        kg. de brócolos cozidos e picados                                                                                  
   1        cebola pequena picada                                                                                                   
   50      gr. de manteiga                                                                                                               
   4        ovos                                                                                                                              
   1        colher (chá) de fermento em pó                                                                                       
   300     ml. de creme de leite                                                                                                       
   10      folhas de manjericão fresco                                                                                            
             sal e pimenta                                                                                                                  



MOLHO:                                                                                                                                 
   250     gr. de queijo fundido                                                                                                       
   500     ml. de creme de leite                                                                                                       
   200     ml. de vinho branco                                                                                                        
   1        cenoura ralada grosso e cozida                                                                                       
   1        maço de brócolo picado e cozido                                                                                   
   3        colheres (sopa) de cebolinha em rodelas bem finas                                                          
             sal, pimenta e noz-moscada                                                                                            
                                                                                                                                              
Puxe a cebola e os brócolos na manteiga. Passe pelo processador com o manjericão até obter um purê. Acrescente os ovos levemente batidos com o fermento e o creme de leite e misture muito bem. Tempere com sal e pimenta. Coloque em forminhas untadas e asse em banho-maria até a mistura ficar firme. Deixe esfriar. Leve à geladeira por, no mínimo, 12 horas.  
                                                                                                                                              
MOLHO:                                                                                                                                 
Dilua a maizena no vinho. Aqueça metade do creme de leite adicione o queijo e mexa até ficar homogêneo. Junte o vinho e o restante do creme de leite e cozinhe por alguns minutos. Acrescente os legumes e deixe mesclar os sabores. Tempere com sal, pimenta e noz-moscada.                                                                                                   
                                                                                                                                              
Na hora de servir:                                                                                                                   
Coloque metade do creme quente numa travessa e desenforme a espuma fria. Regue com o restante do creme e decore com um pouco de salsinha picada.
